Mom's Hawaiian Cole Slaw
1 bag cole slaw blend (shredded cabbage, carrots and red cabbage, no dressing)
One small can crushed pineapple either with or without it's own juices. I do not drain the pineapple. Last night I used about 1/3 of a fresh pineapple and it was great.
1/4 of a medium onion
1/2 cup mayonnaise
2 Tab. ketchup, about two good squeezes. Dressing should be just a little pink.
Sugar if desired. I think it is sweet enough, but it will depend on the pineapple.
Method:
Put bagged cole slaw blend in a gallon sized zippered plastic bag.
In the bowl of a food processor or in the pitcher of a blender, put remaining ingredients and process until the onion is minced. If you are using canned crushed pineapple, wait to add that and do not over process. Pour this dressing into the bag with the cole slaw blend. Seal the bag and manipulate to mix well. Let marinate in fridge for a couple of hours or even overnight. Serve and keep cold. Enjoy...it could not be easier. _________________ Marilyn |

Sounds great Marilyn, will give it a try! I like the pineapple component; wonder how it would pair with a little heat - like jalapeno, cayenne or other pepper? Guess I'll be finding out soon!

I think the addition of hot sauce or chopped jalapeno pepper would be great. I love the juxtoposition of sweet and hot. Good luck with the trial. _________________ Marilyn |
